The Executive Chef is accountable for managing kitchen operations, which includes meal planning, oversight, and coordination of kitchen staff, procurement of food supplies and kitchen equipment, and ensuring that food preparation adheres to the Oak View Group’s quality standards. The ideal candidate will possess a thorough understanding of applicable health, sanitation, and licensing regulations while ensuring that personnel receive appropriate training. Additionally, the Executive Chef will be responsible for the profitability of the Food Preparation Department.
The salary for this role ranges from $65,000 to $75,000 annually. Full-time employees are eligible for a comprehensive benefits package that includes health, dental, and vision insurance, a 401(k) savings plan with matching contributions, and paid time off, encompassing vacation days, sick days, and 11 holidays. This position will remain open until July 18, 2025.
Responsibilities:
- Develop menus considering the expected number of guests, market trends, the popularity of dishes, and relevant occasions, including holidays.
- Collaborate closely with the Food & Beverage Director and/or General Manager to assign pricing for daily menus, banquets, and special events.
- Complete appropriate menu engineering worksheets using the food and beverage point-of-sale system for precise item analysis, and ensure pertinent information is communicated and displayed to kitchen staff.
- Oversee all cooking activities, checking methods of food preparation and cooking, portion sizes, and food garnishing through tasting and inspecting.
- Manage the procurement of food supplies and kitchen equipment, including inventory organization and approving the quality of received goods.
- Consult with the General Manager and Premium Manager regarding game day, non-game day, and special event arrangements, resolving matters related to cooking, serving, and staffing needs.
- Engage with Members and Guests through daily visits to food locations, gathering feedback, working with various committees, and promoting the Club within the community and industry.
- Maintain professional interaction with Members and Guests, accommodating changes and last-minute requests as necessary.
- Oversee the recruitment, selection, and hiring of kitchen personnel and direct their training, development, and promotional pathways.
- Implement company policies and ensure adherence among staff, managing disciplinary actions and compliance with standards.
- Plan, schedule, and modify employee work hours and responsibilities as required.
- Calculate payroll and maintain cost accounts, setting prices for food items to ensure profitability.
- Adhere to budgetary guidelines for food, labor, and miscellaneous costs, while analyzing workplace safety policies and practices.
- Participate in inventory management with the Food & Beverage Director, ensuring validity of counts and pricing as needed.
- Ensure proper management of the point-of-sale system and foster a collaborative environment among team members to deliver exceptional service.
- Address Member and Guest complaints promptly and implement service recovery strategies.
- Adapt to fluctuating operational demands by assisting colleagues and performing various tasks as required.
- Uphold all company policies, standards of operations, and ethics in interactions with Members, peers, and employees.
- Maintain a clean and professional appearance in accordance with Oak View Group, Ovations, and property standards.
- Demonstrate initiative in seeking personal and professional development and maintaining relevant certifications.
Qualifications:
- A minimum of 3-5 years of experience as an Executive Chef, including staff supervision, cost control, product knowledge, quality control, and sanitation.
- A high school diploma or equivalent is required; a college degree is preferred.
- Possession of a Serv Safe Management Certificate is mandatory.
- Ability to perform physical tasks associated with the role, including standing, walking, lifting, pushing, and pulling items weighing up to 100 lbs occasionally.
