The Chef de Cuisine is a pivotal leadership position within the culinary team at Spice Catering Co. This role is responsible for managing daily back-of-house operations, overseeing culinary execution for off-site events, and driving innovation in menu development. Serving as a vital link between the kitchen team and company leadership, the Chef de Cuisine ensures excellence in food quality, kitchen systems, staffing, and training, all while exemplifying Spice’s commitment to sustainability and thoughtful hospitality. Key Responsibilities
Leadership & Team Development
- Mentor, coach, and hold back-of-house team members accountable to Spice standards and core values.
- Conduct daily pre-shift meetings and assign responsibilities to ensure kitchen success.
- Support the hiring, onboarding, and training of kitchen staff.
- Supervise staff scheduling and performance management.
- Cultivate a positive, collaborative, and professional kitchen culture.
Operational Management
- Oversee daily kitchen operations, including food preparation, event execution, and sanitation practices.
- Maintain high standards of food safety, cleanliness, and organization.
- Monitor food production to ensure quality, consistency, and presentation.
- Collaborate with the Executive Chef to optimize systems and standard operating procedures.
- Manage equipment maintenance and report any needs for repairs.
Menu Development & Innovation
- Assist in crafting seasonal, scratch-made menus that align with Spice’s mission.
- Introduce and teach new techniques, culinary trends, and recipes to the team.
- Contribute creative ideas for engaging guest experiences, including chef activations and live cooking demonstrations.
Cost Control & Administration
- Aid in managing inventory, ordering, and waste reduction practices.
- Track food and labor costs to achieve financial objectives.
- Support recipe development, costing, and documentation processes.
- Ensure efficient and accurate completion of event preparation and packing.
Cross-Department Collaboration
- Work closely with sales, event, and warehouse teams to ensure seamless operational execution.
- Participate in planning meetings for large-scale or complex events.
- Communicate effectively and promptly to address challenges and maintain team alignment.
