Job Summary:
The Chef is entrusted with overseeing the complete operations of the back-of-house and kitchen area within our restaurant. The Chef and Kitchen Managers are responsible for hiring staff, procuring food supplies, and ensuring comprehensive training in food preparation and kitchen safety protocols. Chefs uphold the company’s standards by guaranteeing that dishes are visually appealing, properly cooked, accurately portioned, and served promptly.
Responsibilities:
– Provide clear direction to kitchen staff, ensuring the efficient execution of all employee duties.
– Monitor kitchen operations to ensure compliance with health and fire department regulations.
– Ensure adherence to state, federal, and local food handling requirements and standards.
– Assist in implementing and managing kitchen and restaurant policies and procedures during scheduled shifts.
– Perform line cook duties as needed and be proficient in all kitchen roles.
– Ensure products are stored at appropriate temperatures and that recipe books are current with menu items, portions, and ingredients.
– Utilize daily prep sheets and meat/fish yield sheets, ensuring accurate product counts and participating in the monthly inventory process.
– Anticipate, identify, and resolve issues relating to inventory, systems, and staffing.
– Monitor labor costs to achieve budgeted goals while adhering to restaurant policies and procedures.
– Oversee and approve the training and development of kitchen staff.
– Participate in the hiring process, conducting interviews and making hiring recommendations.
– Assist in completing all back-of-house employee 30-day and annual performance reviews.
