Job Summary: The F&B Line Cook is responsible for the preparation and cooking of all menu items, adhering to the established recipes and standards of the Food & Beverage department. This role requires maintaining a clean, organized, and safe work area while ensuring that the kitchen is well-stocked.
Primary Duties & Responsibilities:
– Foster a positive and professional demeanor with team members and guests.
– Keep abreast of all current and upcoming promotions and events at Odawa Casino Resort.
– Follow production guides and daily inventory guidelines.
– Properly store food in designated areas, adhering to temperature requirements and food safety standards.
– Execute duties related to receiving, thawing, storing, measuring, preparing, and reheating a variety of food items, including sauces, soups, and fresh produce.
– Maintain high standards for raw product quality and demonstrate the ability to identify raw ingredients by sight.
– Transform raw ingredients into finished dishes that meet predetermined food preparation standards.
– Accurately measure and weigh ingredients, utilizing kitchen manuals and recipe files as needed.
– Prepare and portion an adequate amount of food to ensure efficient line operation, following proper storage and dating procedures.
– Wash, peel, cut, and seed various vegetables and fruits; clean and prepare meats, poultry, and seafood.
– Prepare soups, sauces, salad dressings, dips, and garnishments using various cooking methods including frying, sautéing, broiling, roasting, and baking.
– Set up, maintain, and break down cooking stations while adhering to sanitation and safety standards.
– Transport food items between workstations, stoves, and refrigeration units as needed.
– Assist with dishwashing and the cleaning of pots and pans in the absence of a steward.
– Regularly clean work areas, equipment, and utensils; manage waste segregation and disposal; and ensure general cleanliness of the kitchen.
– Attend meetings as required and complete all necessary training satisfactorily.

Minimum Qualifications:
– A minimum of one (1) year of experience in the service industry.
– Basic proficiency in math.
– Fluent in reading, writing, and speaking English.

– Understanding and practical application of the First In First Out (FIFO) rotation system.
– Knowledge of dressings, sauces, and salad preparation.

– Exposure to high noise levels and a smoke-filled environment.
