Job Summary:
The Line Cook is responsible for preparing and cooking all menu items in alignment with the Food & Beverage (F&B) recipes and standards. This position entails maintaining a clean, safe, and organized work area while ensuring the kitchen is adequately stocked.
Primary Duties & Responsibilities:
- Foster a positive and professional rapport with both Team Members and guests.
- Stay informed about all current and upcoming promotions and events at Odawa Casino Resort.
- Utilize the production guide along with daily inventory and ordering procedures.
- Store food items in designated areas, adhering to temperature requirements and preventing spoilage.
- Execute proper receiving, thawing, storage, portioning, sanitation, heating, and re-heating of various food products, including sauces, soups, salad bar items, and produce.
- Uphold raw product quality standards and accurately identify ingredients.
- Transform raw products into high-quality finished meals in accordance with established food preparation standards.
- Demonstrate competency in the use of measuring tools for ingredients.
- Refer to kitchen manuals and recipe files as necessary.
- Prepare an adequate quantity of food to maintain efficient service, following proper storage and dating protocols.
- Perform preparation tasks including washing, peeling, cutting, and seeding fruits and vegetables, as well as cleaning and preparing meats, poultry, and seafood.
- Create soups, sauces, salad dressings, cold sauces, dips, and garnishments.
- Utilize various cooking methods, including frying, sautéing, broiling, roasting, braising, poaching, steaming, baking, stir-frying, and boiling.
- Set up, maintain, and dismantle cooking stations as needed.
- Ensure compliance with all sanitation and safety standards, including food preparation and storage protocols.
- Transport food items between workstations, stoves, and refrigerators.
- Assist with dishwashing in the absence of a steward.
- Clean work areas, equipment, and utensils; manage waste disposal and clean flooring and garbage containers.
- Attend all required meetings and complete all necessary training.
- Maintain confidentiality in all aspects of the role.
- Be available to work at other properties as required and perform duties as directed by management, depending on business needs.
- Execute additional responsibilities as assigned within the scope of the position.

Minimum Qualifications:
- A minimum of one (1) year of experience in the service industry.
- Basic math skills are required.
- Must read, write, and speak English fluently.
- Knowledge of the proper use of all kitchen equipment utilized in food preparation.
- Familiarity with the First In First Out (FIFO) system for food rotation.
- Understanding of compound dressings, sauces, and salads.
- Proficient handling of fresh meat, poultry, and seafood, along with proper roasting techniques.
- Ability to stand for extended periods and perform physical tasks such as bending, stooping, reaching, pushing, and pulling.
- Willingness to work in environments with loud noise and smoke exposure.
- Flexibility to work various shifts, including overtime, weekends, holidays, and special events as required.
