Essential Duties & Responsibilities:

  • Adhere to all departmental operating procedures, including maintaining daily temperature logs, cleaning logs, line check sheets, and food waste records.

  • Ensure compliance with all food-handling and sanitation regulations.

  • Prepare various food items for restaurant and banquet offerings, including fruits, vegetables, meats, and seafood.

  • Execute food orders promptly, accommodating guest preferences while managing multiple orders simultaneously.

  • Prepare dishes in alignment with recipe guidelines, sampling and adjusting flavors under the supervision of chefs.

  • Accurately measure and control ingredients according to established recipes.

  • Collaborate with the Main Kitchen Cook to ensure effective completion of daily preparations, workstation restocking, meal breaks, and end-of-shift cleaning.

  • Work at various stations as needed, including Pantry, Fryer, Broiler/Grill, Sauté, Dessert Station, Buffet, and Action Stations.

  • Monitor and maintain inventory levels of food and supplies, coordinating restocks and reporting shortages to the chef.

  • Ensure cleanliness and readiness of dishes and utensils, maintaining sanitation standards at all times.

  • Uphold workplace safety and cleanliness by regularly cleaning work areas and adhering to sanitation standards and legal regulations.

  • Follow all food safety and sanitation program guidelines, such as Ecosure.

  • Maintain equipment by adhering to cleaning schedules, troubleshooting issues, and requesting repairs as needed.

  • Assist and support operational needs at the request of the Sous Chef, Executive Chef, or other leadership.

  • Communicate shift updates and concerns with culinary leaders at the end of each shift.

Basic Qualifications & Skills:

  • High School diploma or equivalent experience.

  • A minimum of two years of relevant cooking experience in a similar setting.

  • Strong knowledge of food preparation and a keen understanding of sanitation protocols essential for a clean kitchen environment.

  • Proficient in using Point of Sale and Kitchen Display Systems.

  • Flexibility in scheduling, including evenings, weekends, and holidays as necessary.

  • Ability to obtain state or local food handling permits and ServSafe food handling certification as required.

  • Successful completion of a criminal background check and drug screen.

Desired Qualifications & Traits:

  • Completion or active enrollment in a Culinary certification or degree program is preferred.

  • Experience as an a la carte or buffet line cook, particularly within hotel or resort environments, is advantageous.

  • Previous leadership experience is a plus.
